This should help you, it's the strat I use against him, beats him every time if you do it right.

Step 1: Fight and fight till you get all your aeons in overdrive but don't use it, withdraw them, you'll need the overdrive for Seymour.
Step 2: If you want everyone to get exp., I suggest you place the weakest characters in front first and then after they do one thing, withdraw them. But if you don't care about sharing exp. then place Tidus, Lulu, and Auron as the first three.
Step 3: Enter the battle with Seymour now. With Tidus, cast haste on Lulu and use Lulu to cast Bio on Seymour, not the thing below him, but Seymour himself. Get Lulu out of there as soon as possible and trade her with Yuna. You can use hastega so everyone will be in haste, but you need to put Yuna in haste. When Yuna's turn comes, summon any aeon and peform overdrive on Seymour, nothing else. Seymour will kill it and revive the thing below him, that takes life from him and also the Bio takes life for every move he makes so add that damage to the damage your aeon's overdrive did. Summon another Aeon and it'll repeat. Keep it up, summon all your aeons and use their overdrives. It should work, everytime after I use Bahamut's overdrive, he goes down.
