More precisely by an overpowered Sister Ray. In fact, Diamond would be one of the most powerful, Sapphire got killed by normal Sister Ray and the others by characters, at the exception of Jade (killed by the Turks) and Omega (killed by Vincent/Chaos)...

I plan on beating Ruby weapon and Diamond.

i think my characters have the potential to beat ruby weapon, but i cant find that damn ultimate weapon!

Well fight Ruby first then Ultima.

What ultima weapon is easy to find if u take a few seconds to look around with the highwind, some times it takes longer to find him.

Even if it is overhyped, I still like FFVII.

Should I buy some Materia/accessories/etc. before heading to Icicle Inn + Northern Crater, and where are good places to level up?

Also, where do I get the 3rd and 4th Enemy Skill Materias? I have the first two, and want to have all 4 so as when I take the Wutai Pagoda quest, Yuffie will have all 4 equipped and Trine will be learnt on all 4...

I just beat Crisis Core last night and im gonna start playing the origional one tonight. What should I do first after completing the origional? Should I get Advent Children or Dirge of Cerberus?

If you're going in order, it would be Advent Children, and then Dirge of Cerberus.
Though A.C is the movie and D.C is the game set a year after it.
