So Ariel couldn't know that humans killed her mother until after KH2 because in the end credits of 2 is when Eric and Ariel got married. Besides Humans weren't any kind of factor in KH1, she just wanted to see other worlds, humans didn't come into play until the second one.
About Mulan, even if she had learned to fight, it's still understandable that she could be captured, because those who went to capture the PoH utalized a power that is more powerful than they have ever faced. So it could be easily justified. Like Will Turner said in KH2 "my own fencing skills are not to be ashamed of...but I've Never faced foes such as that before." and remember, he dueled Jack Sparrow and won, which is why Jack was sent to prison but then Will broke him out, so Will has fighting skills, but admits he is no match for the heartless, and neither is Jack sparrow, without Sora, Donald, and Goofy. that's just the heartless, Riku could easily take out beast (which was shown in Hollow Bastion) so it could be very easily explained, at any point in the Mulan timeline, if she were to be captured.
And when I was talking about curiosity, I was saying that Alice was curious too, and she even admits is too much for her own good. So, just because she accidently fell down the hole, had she not given into the curiosity, she would have been fine. Ariel, Riku, and Master Xehanort all had curiosity with good intentions, just as Alice, so what makes her different that those people that she can have a heart of pure light?
