here is my take on it- Heartless- they have are made of the hearts of the dead so they have no actual heart, thus they are trying to steal hearts so they can also have one

nobodies- made of the body of the dead- they are trying to collect hearts so they can restore themselves to their original bodies

I wouldn't be surprised if Unbirths had to be reborn into that form.
