Maybe because she got to some of his memories while he was holding her? She could've tapped into his memories somehow (through Sora's memories of him?)

Well i'm not sure but maybe since Xion had encountered Riku at Beast's Castle earlier, some of his memories went into her and while she was dreaming, that memory happened. But that's just my guess.

I don't quite think so. The scene where Xion changes form several times and has an identity crisis happens before Riku is holding her in his arms.

the nightmare while in his arms. If not that, then through Sora's memories of him she was able to touch a bit on his memories. I don't understand it much either.

She was exploring Castle Oblivion, so she might have come in contact with that memory somehow.

Didn't the Organization have a crystal ball that watched over the events in Castle Oblivion? Maybe she retreived it from that?

Exactly. The only safe assumption we can make is that through the possession of Sora's memories, some of Riku's have been entangled as well.
